pumpkin raisin walnut chocolate chip muffins

we made these yummy muffins today, a little sunday treat. it was a super bum kinda day – the weather was gloomy, it was a chilly one too & sundays are just always great for eating being lazy :)

THE RECIPE

  • 1 cup of raisins
  • 1 cup of water – boil and cool then drain off raisins
  • 2 eggs
  • 1 cup of canned pumpkin
  • 1/2 cup cooking oil
  • 1/3 cup water
  • 2 cups of flour
  • 1 1/2 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 cup chopped walnuts

so you combine 1 cup of raisins & 1 cup of water & boil them. then you remove them from the heat & let them cool to room temp. mix the eggs, pumpkin, oil & 1/3 cup of water. sift the flour, sugar, baking soda, salt, nutmeg and cinnamon. stir pumpkin mixture into dry ingredients, adding walnuts & raisins last. grease & flour & mix well – pour batter into cupcake sheets. we baked them for about 45 min on 350 degrees. deeeeeeeeeeeeelish :) oh & we also added chocolate chips!
